Having the Cake - September 12, 2012

As so often occurs, the expectation of perfection of outcome for a particular enterprise is not achieved but some other learning occurs. In this regard, I realized that homemade cream cheese works wonderfully well for cheesecake, but not so homemade sour cream (no stabilizers result in watery mess on top of the cake). However, pouring off the offending mess and starting again with store bought sour cream produced a cake worthy of a photo .... which luckily was snapped prior to the cat taking a couple of swipes from the top.

The guests were more than appreciative (in spite of the soggy crust); they were downright flattering. Next time I'll avoid the water bath step.
